Mom’s Authentic Puerto Rican Rice & Beans

Ingredients
  

Beans
  • 2 tbsp olive oil
  • 0.25 cup sofrito
  • 1 packet sazón with achiote
  • 1 tsp adobo seasoning
  • 1 tsp oregano
  • 0.5 tsp black pepper
  • 1 can pink or red beans drained and rinsed
  • 0.5 cup tomato sauce
  • 2.5 cups water or broth
Rice
  • 2 tbsp vegetable oil
  • 2 cups medium-grain rice rinsed
  • 2.5 cups water
  • 1 tsp salt

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Heat olive oil in a pot over medium heat.
  2. Add sofrito, sazón, adobo, oregano, and pepper; sauté until fragrant.
  3. Stir in beans and tomato sauce.
  4. Add water or broth and bring to a simmer.
  5. Simmer 25–30 minutes until slightly thickened.
  6. For the rice, heat oil in a pot, add rinsed rice, and stir to coat.
  7. Pour in water and salt; boil until water evaporates.
  8. Cover, reduce heat, and steam for 20 minutes.
  9. Fluff and serve with beans.

Notes

Add potatoes or pumpkin for thicker, richer beans.
