Ingredients
  

Chili Base
  • 2 tbsp olive oil
  • 1 cup yellow onion diced
  • 3 cloves garlic minced
  • 1.5 lb chicken breast diced
  • 2 cups apples peeled and chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups white cheddar cheese shredded
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp ground thyme
  • 0.5 tsp ground cumin

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened.
  3. Stir in garlic and cook until fragrant.
  4. Add chicken, season, and cook until lightly browned.
  5. Stir in apples and spices.
  6. Pour in chicken broth and bring to a simmer.
  7. Simmer until chicken is cooked and apples are tender.
  8. Stir in cream and cheese until smooth and creamy.
  9. Adjust seasoning and serve hot.

Notes

For best texture, grate cheese fresh and add gradually.
