Ingredients
  

Chili Base
  • 1 lb chicken breast diced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 apples peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups white cheddar cheese freshly grated
  • 1 tsp fresh thyme
  • 0.5 tsp smoked paprika
  • to taste salt
  • to taste black pepper

Equipment

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add diced onion and cook until soft and translucent.
  3. Stir in garlic and cook until fragrant.
  4. Add chicken and season lightly. Cook until lightly browned.
  5. Add apples, thyme, and smoked paprika. Stir to combine.
  6. Pour in chicken broth and bring to a gentle simmer.
  7. Simmer until chicken is cooked through and apples are tender.
  8. Stir in heavy cream and reduce heat to low.
  9. Gradually add white cheddar cheese, stirring until smooth.
  10. Season to taste and serve warm.

Notes

For best texture, add cheese off heat and stir gently.
