Ingredients
  

Main Ingredients
  • 500 g ground pork preferably with some fat
  • 2 tbsp vegetable oil
  • 1 small onion finely chopped
  • 4 cloves garlic minced
  • 2 tbsp fish sauce
  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp oyster sauce optional
  • 1 tsp black pepper
  • 1 red chili sliced, optional
  • 100 g bell peppers thinly sliced
  • 2 spring onions sliced
  • Fresh coriander leaves for garnish
  • Cooked jasmine rice for serving

Equipment

  • Wok or large skillet
  • Spatula
  • Mixing bowls
  • Knife and chopping board

Method
 

  1. Chop all vegetables and prepare ingredients.
  2. Heat oil in wok or large skillet over medium-high heat.
  3. Add onion and sauté until translucent, about 2–3 minutes.
  4. Add ground pork, breaking it apart, cook until browned, about 5–7 minutes.
  5. Stir in garlic, fish sauce, soy sauces, and brown sugar. Cook 2–3 minutes until caramelized.
  6. Add bell peppers and chili slices, stir-fry 2 minutes until slightly tender.
  7. Remove from heat, add spring onions and coriander. Toss gently.
  8. Serve hot over steamed jasmine rice.

Notes

Adjust sugar and soy sauce levels to taste. Ground pork with fat gives best results.
