Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 eggs large
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Cranberry Topping
  • 2 cups fresh cranberries
  • 0.75 cup granulated sugar
  • 0.5 cup orange juice
  • 1 tsp orange zest

Method
 

  1. Preheat oven to 325°F (165°C). Prepare a springform pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake 10 minutes.
  3. Beat cream cheese until smooth. Add sugar and mix until creamy.
  4. Add sour cream, vanilla, and salt. Mix gently.
  5. Add eggs one at a time, mixing just until incorporated.
  6. Pour filling over crust and bake 60–70 minutes until edges are set.
  7. Cool gradually, then chill at least 4 hours.
  8. Simmer cranberry topping ingredients until thick. Cool and spread over cheesecake.

Notes

For best texture, allow cheesecake to cool slowly and chill overnight before serving.
