- Preheat oven to 325°F (165°C). Prepare a springform pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake 10 minutes.
- Beat cream cheese until smooth. Add sugar and mix until creamy.
- Add sour cream, vanilla, and salt. Mix gently.
- Add eggs one at a time, mixing just until incorporated.
- Pour filling over crust and bake 60–70 minutes until edges are set.
- Cool gradually, then chill at least 4 hours.
- Simmer cranberry topping ingredients until thick. Cool and spread over cheesecake.
Notes
For best texture, allow cheesecake to cool slowly and chill overnight before serving.
