Ingredients
  

Cookie Batter
  • 1 lb shrimp peeled and deveined
  • 2 cups spinach fresh
  • 1 cup cherry tomatoes halved
  • 4 cloves garlic minced
  • 0.5 cup cream
  • 0.5 cup parmesan grated
  • 2 tbsp olive oil
  • 1 lb pasta
Filling
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water.
  2. Season shrimp with paprika, garlic powder, salt, pepper, and Italian seasoning.
  3. Sear shrimp in olive oil until pink; remove and set aside.
  4. Add garlic to skillet; sauté until fragrant.
  5. Add tomatoes; cook until softened and bursting.
  6. Stir in spinach until wilted.
  7. Pour in cream and parmesan; stir until creamy.
  8. Add pasta and shrimp; toss with sauce. Adjust with pasta water.

Notes

Add lemon zest or extra parmesan for brightness.
