Ingredients
  

  • 14 oz udon noodles
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1 tbsp neutral oil
  • 2 cloves garlic minced
  • 1 cup cabbage sliced
  • 0.5 cup carrot julienned
  • 0.5 cup mushrooms sliced

Equipment

  • Large skillet or wok
  • Pot
  • Tongs
  • Knife and cutting board

Method
 

  1. Loosen udon noodles in boiling water and drain.
  2. Mix soy sauce, mirin, and sesame oil.
  3. Stir-fry garlic and vegetables over high heat.
  4. Add noodles and sauce, tossing until glossy.
  5. Finish with green onions and serve immediately.

Notes

Use high heat and avoid overcrowding for best texture.
