Ingredients
  

Filling
  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 cup diced tomatoes
  • 1 tbsp tomato paste
Cornbread Topping
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk

Method
 

  1. Preheat oven to 375°F (190°C). Grease a casserole dish.
  2. Cook onion and garlic in olive oil until soft. Add beef and brown.
  3. Stir in tomatoes, tomato paste, and spices. Simmer briefly.
  4. Transfer filling to dish and top with cheese.
  5. Mix cornbread batter and pour over filling.
  6. Bake 30–35 minutes until golden and set.

Notes

Let rest before slicing for best texture.
