Ingredients
  

Cookie Batter
  • 3 large sweet onions (Vidalia preferred) sliced into rings
  • 0.5 cup mozzarella cheese shredded
  • 0.5 cup cheddar cheese shredded
  • 0.5 cup Monterey Jack cheese shredded
  • 4 tbsp unsalted butter sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
Filling
  • optional parsley for garnish

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
  2. Slice onions into 1/4-inch rings and separate the layers.
  3. Spread onions evenly in the baking dish.
  4. Dot sliced butter evenly over the onions.
  5. Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper.
  6. Top evenly with mozzarella, cheddar, and Monterey Jack cheeses.
  7. Bake 35–40 minutes until cheese is bubbly and onions are tender.
  8. Let cool 5 minutes, garnish with parsley, and serve.

Notes

For extra richness, add a splash of heavy cream before baking.
