  • 16 oz cream cheese softened
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 2 tbsp taco seasoning
  • 0.25 cup sour cream
Coating
  • 0.25 cup red bell pepper finely chopped
  • 0.25 cup green onions chopped
  • 2 tbsp fresh cilantro chopped

Method
 

  1. In a large bowl, mix softened cream cheese and sour cream until smooth.
  2. Add shredded cheddar, Monterey Jack, and taco seasoning. Mix until fully combined.
  3. Fold in chopped green onions.
  4. Shape mixture into a ball using plastic wrap.
  5. Refrigerate for at least 1 hour to firm.
  6. Roll chilled cheese ball in chopped bell pepper, green onions, and cilantro.
  7. Serve with tortilla chips or crackers.
