- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Cook bacon in a skillet over medium heat until crispy. Drain and crumble.
- Slice croissants horizontally, keeping one side intact.
- Spread softened butter lightly inside each croissant.
- Fill with blue cheese and crumbled bacon.
- Drizzle honey evenly over the filling.
- Bake for 10–12 minutes until cheese is melted and croissants are warm.
- Finish with black pepper and herbs. Serve warm.
