Ingredients
  

Stuffed Chicken
  • 4 boneless skinless chicken breasts
  • 0.5 cup sundried tomatoes chopped
  • 1 cup fresh spinach chopped
  • 0.5 cup cream cheese softened
  • 0.5 cup mozzarella cheese shredded
  • 2 cloves garlic minced
  • 2 tbsp olive oil

Method
 

  1. Preheat oven to 375°F and prepare baking dish.
  2. Mix sundried tomatoes, spinach, cream cheese, mozzarella, and garlic.
  3. Cut pockets in chicken breasts and stuff with filling.
  4. Sear chicken in olive oil for 2–3 minutes per side (optional).
  5. Bake 25–30 minutes until cooked through.
  6. Garnish and serve.

Notes

Do not overfill pockets. Let chicken rest before slicing.
