Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together dry ingredients in a bowl.
- Cream butter and sugar until fluffy. Add egg and vanilla.
- Combine wet and dry ingredients. Chill dough 45 minutes.
- Flatten dough, add jam, cover and seal.
- Bake 11–13 minutes. Cool completely.
- Whisk glaze ingredients and spread over cookies.
Notes
Chill dough to prevent spreading and use thick jam to avoid leaking.
