Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
Filling
  • 0.75 cup strawberry jam thick
Glaze
  • 1.5 cups powdered sugar
  • 2-3 tbsp milk
  • 0.5 tsp vanilla extract

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together dry ingredients in a bowl.
  3. Cream butter and sugar until fluffy. Add egg and vanilla.
  4. Combine wet and dry ingredients. Chill dough 45 minutes.
  5. Flatten dough, add jam, cover and seal.
  6. Bake 11–13 minutes. Cool completely.
  7. Whisk glaze ingredients and spread over cookies.

Notes

Chill dough to prevent spreading and use thick jam to avoid leaking.
