- Beat cream cheese, sugar, and vanilla until smooth. Fold in strawberries.
- Fill and roll eggroll wrappers, sealing edges with beaten egg.
- Heat oil to 350°F.
- Fry eggrolls 2–3 minutes per side until golden brown.
- Drain on paper towels and serve warm.
Notes
For a lighter option, bake or air fry instead of deep frying.
