Ingredients
  

Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 0.5 tsp vanilla extract
  • 0.75 cup fresh strawberries chopped
Assembly
  • 10-12 eggroll wrappers
  • 1 egg beaten
  • as needed oil for frying

Method
 

  1. Beat cream cheese, sugar, and vanilla until smooth. Fold in strawberries.
  2. Fill and roll eggroll wrappers, sealing edges with beaten egg.
  3. Heat oil to 350°F.
  4. Fry eggrolls 2–3 minutes per side until golden brown.
  5. Drain on paper towels and serve warm.

Notes

For a lighter option, bake or air fry instead of deep frying.
