Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
Cheesecake Filling
  • 4 oz cream cheese softened
  • 0.25 cup powdered sugar
  • 0.5 tsp vanilla extract
Strawberry Jam
  • 1 cup fresh strawberries chopped
  • 0.25 cup granulated sugar
  • 1 tbsp lemon juice

Equipment

Method
 

  1. Prepare strawberry jam by cooking strawberries, sugar, and lemon juice until thick. Cool completely.
  2. Mix cream cheese, powdered sugar, and vanilla until smooth. Chill briefly.
  3. Whisk flour, baking powder, baking soda, and salt in a bowl.
  4. Cream butter and sugars until fluffy. Add egg and vanilla.
  5. Mix dry ingredients into wet ingredients until dough forms.
  6. Fill cookie dough with cheesecake mixture and seal.
  7. Add jam to the top indentation.
  8. Bake at 350°F (175°C) for 13–15 minutes. Cool before serving.

Notes

Cool completely to allow cheesecake filling to set.
