Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup freeze-dried strawberries crushed
Cheesecake Filling
  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls

  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Prepare cheesecake filling and freeze small scoops until firm.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar until fluffy, then add egg and vanilla.
  4. Combine wet and dry ingredients, then fold in strawberries.
  5. Wrap dough around frozen filling and seal.
  6. Bake until edges are set and lightly golden.

Notes

Do not overbake to keep cookies soft.
