Ingredients
  

Crispy Rice Base
  • 2 cups sushi rice cooked
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 3 tbsp neutral oil for frying
Spicy Salmon
  • 8 oz fresh salmon diced
  • 0.25 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp sesame oil

Equipment

Method
 

  1. Cook sushi rice and season with vinegar, sugar, and salt.
  2. Press rice into a pan and chill until firm.
  3. Cut rice into squares and fry until golden and crispy.
  4. Mix salmon with mayo, sriracha, soy sauce, and sesame oil.
  5. Top crispy rice with spicy salmon and garnish.
