Ingredients
  

Cornbread Batter
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar
  • 2 eggs large
  • 1 cup buttermilk
  • 0.33 cup unsalted butter melted
  • 1 cup corn kernels
  • 2 jalapeños diced

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Whisk dry ingredients together in a large bowl.
  3. Mix eggs, buttermilk, and melted butter in a separate bowl.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in jalapeños and corn.
  6. Pour batter into prepared dish and bake 25–30 minutes.
  7. Cool slightly before slicing and serving.

Notes

Adjust jalapeños for desired heat level.
