Ingredients
  

Spicy Chicken
  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp cumin
  • 0.25 tsp cayenne pepper adjust to taste
  • 1 tsp salt
  • 0.5 tsp black pepper
Rice
  • 1.5 cups long-grain rice
  • 3 cups water or chicken broth
  • 0.5 tsp salt
Creamy Sauce
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream or Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Rinse rice and cook with water or broth and salt according to package instructions. Fluff and set aside.
  2. Pat chicken dry and coat evenly with olive oil and all spices.
  3. Heat a skillet over medium-high heat and cook chicken 5–7 minutes per side until golden and cooked through.
  4. Remove chicken from pan and let rest for 5 minutes before slicing.
  5. In a bowl, whisk together mayonnaise, sour cream, lemon juice, garlic, salt, and pepper until smooth.
  6. Assemble bowls with rice, sliced chicken, and generous drizzle of creamy sauce.
  7. Garnish with herbs or chili flakes and serve warm.

Notes

Adjust spice level to taste. Sauce can be thinned with water or milk.
