Dry Ingredients
  • 1.75 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cloves optional
Wet Ingredients
  • 3 ripe bananas mashed
  • 1 cup grated carrots
  • 0.5 cup unsalted butter melted
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup walnuts chopped

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Prepare loaf pan.
  2. Whisk dry ingredients together.
  3. Mix bananas, carrots, butter, and sugars.
  4. Add eggs and vanilla.
  5. Fold in dry ingredients and walnuts.
  6. Bake 50–60 minutes until done.
  7. Cool before slicing and serving.

Notes

For extra flavor, toast walnuts before adding to batter.
