Ingredients
  

Peach Filling
  • 3 fresh peaches peeled and sliced
  • 3 tbsp unsalted butter
  • 0.25 cup brown sugar
  • 0.5 tsp cinnamon
  • 1 tsp cornstarch optional, for thicker filling
Egg Rolls
  • 8 egg roll wrappers
  • 1 egg beaten, for sealing
  • Oil for frying or nonstick spray for baking
  • Powdered sugar optional for garnish

Method
 

  1. Cook peach filling with butter, brown sugar, and cinnamon until soft. Add cornstarch to thicken if desired.
  2. Place filling in egg roll wrappers and roll tightly, sealing edges with beaten egg.
  3. Fry in oil at 350°F (175°C) for 2–3 minutes per side or bake at 400°F (200°C) for 12–15 minutes until golden.
  4. Cool slightly, dust with powdered sugar, and serve with whipped cream or ice cream if desired.

Notes

Peach filling can be made ahead of time; assemble before cooking.
