Ingredients
  

Cookie Dough
  • 2 cups almond flour finely ground
  • 0.75 cup powdered erythritol
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup cream cheese softened
  • 0.25 cup unsalted butter softened
  • 1 egg large
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk almond flour, powdered erythritol, baking powder, and salt in a bowl.
  3. Beat cream cheese and butter until smooth and fluffy.
  4. Add egg and vanilla extract and mix until fully combined.
  5. Gradually mix in dry ingredients until a soft dough forms.
  6. Scoop dough onto baking sheet, flatten slightly, and bake for 10–12 minutes.
  7. Cool on baking sheet briefly, then transfer to wire rack to cool completely.

Notes

Do not overbake; cookies firm up as they cool.
