- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream butter and sugars until light and fluffy.
- Add egg, vanilla, and pistachio pudding mix; mix until smooth.
- Gradually mix in dry ingredients until just combined.
- Fold in pistachios and white chocolate chips if using.
- Scoop dough onto baking sheets, spacing 2 inches apart.
- Bake 10–12 minutes until edges are set. Cool on wire rack.
Notes
Do not overbake for best chewy texture.
