Method
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Cream butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla, mixing well.
- Whisk flour, baking soda, and salt. Gradually fold into wet ingredients. Fold in chocolate chips.
- Press cookie dough evenly into the prepared pan. Bake 12–15 minutes until lightly golden. Cool completely.
- Combine softened ice cream, mini marshmallows, graham cracker crumbs, and chocolate chips.
- Invert cooled cookie layer onto clean parchment. Spread ice cream mixture evenly, leaving 1-inch border.
- Roll carefully using parchment. Freeze 2–3 hours until firm.
- Slice into 1-inch pieces, drizzle chocolate, sprinkle extra marshmallows and graham cracker crumbs if desired, serve.
Notes
Can prepare a day in advance. Best served frozen.
