S’mores Explosion Cookie Dough Ice Cream Roll

Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup mini chocolate chips
Ice Cream Layer
  • 1 quart vanilla ice cream slightly softened
  • 1 cup mini marshmallows
  • 0.5 cup graham cracker crumbs
  • 0.5 cup chocolate chips

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla, mixing well.
  3. Whisk flour, baking soda, and salt. Gradually fold into wet ingredients. Fold in chocolate chips.
  4. Press cookie dough evenly into the prepared pan. Bake 12–15 minutes until lightly golden. Cool completely.
  5. Combine softened ice cream, mini marshmallows, graham cracker crumbs, and chocolate chips.
  6. Invert cooled cookie layer onto clean parchment. Spread ice cream mixture evenly, leaving 1-inch border.
  7. Roll carefully using parchment. Freeze 2–3 hours until firm.
  8. Slice into 1-inch pieces, drizzle chocolate, sprinkle extra marshmallows and graham cracker crumbs if desired, serve.

Notes

Can prepare a day in advance. Best served frozen.
