- Season steak with salt and pepper. Brown in olive oil until seared.
- Transfer steak to slow cooker.
- Sauté onion, peppers, and garlic with tomato paste.
- Add vegetables and remaining ingredients to slow cooker.
- Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Adjust seasoning and serve hot.
Notes
Chili tastes even better the next day and freezes well.
