Method
- Brown the Italian sausage in a skillet and drain excess fat.
- Add onions, carrots, celery, and garlic to the slow cooker.
- Stir in the browned sausage.
- Pour in chicken broth and add basil, oregano, red pepper, salt, and pepper.
- Cook on LOW for 6 hours or HIGH for 3–4 hours.
- Add tortellini and heavy cream; cook on HIGH for 20–30 minutes.
- Stir in spinach during the last 5 minutes.
- Garnish with parsley and Parmesan before serving.
Notes
For a thicker soup, add a cornstarch slurry when adding the cream.
