Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or spicy, browned
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp crushed red pepper optional
  • 2 cups cheese tortellini fresh or frozen
  • 1.5 cups heavy cream or half-and-half
  • 2 cups spinach optional
  • parsley & Parmesan for garnish

Equipment

Method
 

  1. Brown the Italian sausage in a skillet and drain excess fat.
  2. Add onions, carrots, celery, and garlic to the slow cooker.
  3. Stir in the browned sausage.
  4. Pour in chicken broth and add basil, oregano, red pepper, salt, and pepper.
  5. Cook on LOW for 6 hours or HIGH for 3–4 hours.
  6. Add tortellini and heavy cream; cook on HIGH for 20–30 minutes.
  7. Stir in spinach during the last 5 minutes.
  8. Garnish with parsley and Parmesan before serving.

Notes

For a thicker soup, add a cornstarch slurry when adding the cream.
