Ingredients
  

Chicken Bolognese
  • 1.5 lbs boneless skinless chicken
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 28 oz crushed tomatoes
  • 15 oz tomato sauce
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 cup chicken broth
  • 1 bay leaf
  • 0.75 cup half-and-half or cream
Pasta
  • 12 oz pasta of choice
  • Parmesan cheese to serve

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Place chicken, vegetables, tomatoes, tomato paste, herbs, salt, pepper, and broth into the slow cooker.
  2. Cook on low for 6–8 hours or high for 3–4 hours.
  3. Remove chicken, shred, and return to the slow cooker.
  4. Stir in cream or half-and-half.
  5. Cook pasta according to package instructions.
  6. Combine pasta with sauce or ladle sauce over pasta.
  7. Serve with Parmesan and fresh herbs.

Notes

For a thicker sauce, cook uncovered for the last 30 minutes.
