Method
- Season beef roast with salt and pepper.
- Sear beef in hot skillet with oil until browned.
- Blend garlic, chipotle peppers, adobo sauce, lime juice, vinegar, spices, and broth.
- Place onions in slow cooker and add beef.
- Pour sauce over beef.
- Cook on low 8 hours or high 4–5 hours.
- Shred beef and mix with sauce.
- Serve in warm tortillas with toppings.
Notes
Barbacoa beef can also be used for burritos, nachos, or rice bowls.
