Ingredients
  

Cranberry Bread Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter melted and cooled
  • 2 eggs large
  • 0.5 cup milk or orange juice
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 1.5 cups fresh cranberries halved

Method
 

  1. Preheat oven to 350°F (175°C) and grease or line a loaf pan.
  2. Whisk flour, baking powder, salt, and sugar in a large bowl.
  3. In another bowl, whisk melted butter, eggs, milk or orange juice, vanilla, and orange zest.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fold in cranberries evenly.
  6. Pour batter into loaf pan and smooth the top.
  7. Bake 50–55 minutes until a toothpick comes out clean.
  8. Cool before slicing and serving.

Notes

Do not overmix batter to keep the bread tender. Toss cranberries lightly in flour to prevent sinking.
