Ingredients
  

Salad
  • 6-8 rainbow carrots shaved into ribbons
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce or tamari
  • 1 tsp maple syrup
  • 1 tsp fresh grated ginger
  • 1 tbsp sesame seeds toasted
  • 2 tbsp fresh cilantro chopped
  • 2 green onions sliced

Method
 

  1. Shave carrots into thin ribbons and place in bowl.
  2. Whisk sesame oil, rice vinegar, soy sauce, maple syrup, and ginger.
  3. Pour dressing over carrots and toss gently.
  4. Top with sesame seeds, cilantro, and green onions.
  5. Serve immediately or chill briefly before serving.

Notes

Toast sesame seeds for enhanced flavor. Chill briefly for best taste.
