- Heat 1 tablespoon oil in a large skillet over medium-high heat. Scramble eggs until just set, then remove and set aside.
- Add remaining oil and cook shrimp for 2–3 minutes until pink. Remove and set aside.
- Sauté garlic briefly until fragrant, then add mixed vegetables and cook 2–3 minutes.
- Add rice, breaking up clumps, and let it cook undisturbed for 1 minute.
- Stir in soy sauce and sesame oil until rice is evenly coated.
- Return eggs and shrimp to the skillet and mix gently.
- Fold in crab meat carefully, season with pepper, and add green onions.
- Remove from heat and serve hot.
Notes
Use day-old rice for best texture and avoid overcooking the seafood.
