Ingredients
  

Fried Rice Base
  • 3 cups cooked rice day-old, chilled
  • 8 oz shrimp peeled and deveined
  • 6 oz lump crab meat picked over
  • 2 tbsp neutral oil divided
  • 2 eggs large, beaten
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 green onions sliced
  • 2 cloves garlic minced
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp black pepper

Method
 

  1. Heat 1 tablespoon oil in a large skillet over medium-high heat. Scramble eggs until just set, then remove and set aside.
  2. Add remaining oil and cook shrimp for 2–3 minutes until pink. Remove and set aside.
  3. Sauté garlic briefly until fragrant, then add mixed vegetables and cook 2–3 minutes.
  4. Add rice, breaking up clumps, and let it cook undisturbed for 1 minute.
  5. Stir in soy sauce and sesame oil until rice is evenly coated.
  6. Return eggs and shrimp to the skillet and mix gently.
  7. Fold in crab meat carefully, season with pepper, and add green onions.
  8. Remove from heat and serve hot.

Notes

Use day-old rice for best texture and avoid overcooking the seafood.
