Ingredients
  

Scallion Oil Noodles
  • 8 oz wheat noodles fresh or dried
  • 6 scallions sliced into long strips
  • 0.25 cup neutral oil
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • chili oil optional

  • Wok or skillet

Method
 

  1. Slice scallions into long strips, separating white and green parts.
  2. Heat neutral oil in a wok over medium heat until shimmering.
  3. Add scallion whites first, then greens, frying until golden and crisp. Remove and set aside.
  4. Reduce heat and add soy sauce, dark soy sauce, and sugar to the scallion oil. Stir well, then turn off heat.
  5. Cook noodles according to package instructions, then drain.
  6. Toss noodles with the scallion oil sauce until evenly coated.
  7. Stir in crisped scallions and garnish with chili oil if desired.

Notes

For deeper flavor, let the scallions fry until lightly charred.
