Ricotta Spread
  • 0.75 cup whole-milk ricotta cheese
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper freshly cracked
Tomato Topping
  • 1 cup cherry tomatoes halved
  • 1 tbsp olive oil
  • 1 clove garlic minced
Finishing
  • 1 tbsp fresh basil chopped
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Toast bread slices until golden and crisp.
  2. Whip ricotta with olive oil, salt, and pepper until smooth and airy.
  3. Heat olive oil in a skillet and cook tomatoes until blistered.
  4. Add garlic and cook briefly until fragrant.
  5. Spread ricotta generously over warm toast.
  6. Top with tomatoes, basil, and chili flakes if using.
  7. Drizzle with olive oil and serve immediately.

Notes

For extra richness, finish with lemon zest or a soft egg.
