Ingredients
  

Biscuit Dough
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup unsalted butter cold and cubed
  • 3/4 cup buttermilk
Sausage Filling
  • 1/2 lb breakfast sausage mild or spicy
  • 1/4 cup onion finely diced
  • 1/4 tsp black pepper
  • 1/2 tsp thyme or Italian herbs
Finishing Butter
  • 2 tbsp unsalted butter melted

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine flour, baking powder, salt, and baking soda. Cut in cold butter until coarse crumbs form. Stir in buttermilk until just combined.
  3. In a skillet over medium heat, cook sausage with onion, black pepper, and thyme until browned. Drain excess fat.
  4. Roll out dough to 1/2 inch thickness. Cut into rounds or squares. Place sausage filling in center, fold or top with another piece of dough, seal edges.
  5. Place biscuits on prepared baking sheet. Brush tops with melted butter.
  6. Bake 15–18 minutes until golden brown. Cool slightly on wire racks before serving.

Notes

Store leftovers in an airtight container. Reheat in oven for best texture.
