Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine flour, baking powder, salt, and baking soda. Cut in cold butter until coarse crumbs form. Stir in buttermilk until just combined.
- In a skillet over medium heat, cook sausage with onion, black pepper, and thyme until browned. Drain excess fat.
- Roll out dough to 1/2 inch thickness. Cut into rounds or squares. Place sausage filling in center, fold or top with another piece of dough, seal edges.
- Place biscuits on prepared baking sheet. Brush tops with melted butter.
- Bake 15–18 minutes until golden brown. Cool slightly on wire racks before serving.
Notes
Store leftovers in an airtight container. Reheat in oven for best texture.
