- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt in a medium bowl.
- Cream butter and brown sugar until light and fluffy.
- Mix in honey, egg, and vanilla extract until smooth.
- Gradually add dry ingredients and mix just until combined.
- Fold in chopped pistachios gently.
- Scoop dough onto baking sheets, spacing cookies 2 inches apart.
- Bake for 11–14 minutes until lightly golden. Sprinkle with flaky sea salt and cool.
Notes
Do not overbake for best chewy texture. Cookies firm up as they cool.
