Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice sweet potatoes into even 1/2-inch rounds.
- Toss sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange rounds in a single layer on the baking sheet.
- Roast for 20 minutes, flip, then roast another 15–20 minutes until golden and tender.
- Remove from oven and drizzle immediately with honey.
- Top with crumbled feta and fresh thyme before serving.
Notes
Serve warm for best texture and flavor. Add chili flakes for heat if desired.
