  • 2 large sweet potatoes sliced into rounds
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp honey to drizzle
  • 0.5 cup feta cheese crumbled
  • 1 tbsp fresh thyme chopped

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice sweet potatoes into even 1/2-inch rounds.
  3. Toss sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  4. Arrange rounds in a single layer on the baking sheet.
  5. Roast for 20 minutes, flip, then roast another 15–20 minutes until golden and tender.
  6. Remove from oven and drizzle immediately with honey.
  7. Top with crumbled feta and fresh thyme before serving.

Notes

Serve warm for best texture and flavor. Add chili flakes for heat if desired.
