- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Slice sweet potatoes into ½-inch rounds and place them in a bowl.
- Drizzle with olive oil, then season with salt, pepper, and smoked paprika.
- Arrange slices on baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through.
- Remove from oven and top immediately with crumbled feta.
- Drizzle with honey and sprinkle fresh herbs before serving.
Notes
Add crushed nuts for crunch or goat cheese for a creamier finish.
