  • 3 sweet potatoes sliced into rounds
  • 3 tbsp olive oil
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper
  • 0.5 tsp smoked paprika optional
  • 0.5 cup feta cheese crumbled
  • 2 tbsp honey plus extra for drizzling
  • 2 tbsp fresh herbs parsley or thyme

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice sweet potatoes into ½-inch rounds and place them in a bowl.
  3. Drizzle with olive oil, then season with salt, pepper, and smoked paprika.
  4. Arrange slices on baking sheet in a single layer and roast for 25–30 minutes, flipping halfway through.
  5. Remove from oven and top immediately with crumbled feta.
  6. Drizzle with honey and sprinkle fresh herbs before serving.

Notes

Add crushed nuts for crunch or goat cheese for a creamier finish.
