Ingredients
  

Sandwich
  • 3-4 jalapeños roasted
  • 4 slices sourdough bread thick-cut
  • 4 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 clove garlic minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.25 tsp salt
  • 2 tbsp butter softened
Optional Add-ins
  • 2 tbsp bacon bits optional
  • honey for drizzling

Method
 

  1. Preheat oven to 425°F (220°C). Place jalapeños on a baking sheet.
  2. Roast 15–20 minutes until skins blister. Steam, peel, deseed, and chop.
  3. Mix cream cheese, cheddar, Monterey Jack, garlic, paprika, onion powder, salt, and roasted jalapeños.
  4. Butter the outside of each bread slice.
  5. Spread jalapeño popper filling inside and assemble sandwiches.
  6. Cook over medium-low heat until golden and cheese is melted.
  7. Slice and serve warm with optional honey drizzle.

Notes

Adjust spice level by removing seeds or adding more peppers.
