Ingredients
  

  • 1 medium eggplant diced
  • 2 zucchinis diced
  • 1 medium onion diced

Method
 

  1. Sauté onions and garlic in olive oil.
  2. Add remaining vegetables and cook until slightly tender.
  3. Add tomatoes, broth, and herbs; simmer 20–25 minutes.

Notes

Garnish with fresh basil before serving.
