- Bloom gelatin in cold water for 5 minutes.
- Heat coconut milk, cream, and sugar in saucepan until sugar dissolves.
- Remove from heat and stir in gelatin until fully dissolved.
- Add vanilla extract and mix well.
- Pour mixture into serving cups and refrigerate until set.
- Combine orange segments, juice, honey, and zest.
- Top chilled coconut layer with orange mixture.
- Garnish with toasted coconut and serve chilled.
Notes
For stronger coconut flavor, use full-fat coconut milk.
