Ingredients
  

Vegetable Medley
  • 2 cups seasonal vegetables carrots, zucchini, bell peppers
  • 1 tbsp olive oil
  • 0.5 cup heavy cream
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh parsley chopped
  • 1 clove garlic minced
  • Salt and pepper to taste

Method
 

  1. Wash and cut vegetables into bite-sized pieces.
  2. Heat olive oil in a pan over medium heat and sauté vegetables with salt and pepper until tender-crisp.
  3. In a small saucepan, combine cream, garlic, and thyme. Heat until warm and slightly thickened.
  4. Pour the herbed cream sauce over vegetables, garnish with parsley, and serve immediately.
