Muffin Batter
  • 1.75 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp pumpkin spice blend
  • 0.5 cup vegetable oil
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
Cream Cheese Filling
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg yolk

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin with paper liners.
  2. Whisk dry ingredients together in a bowl.
  3. Mix oil and brown sugar, then add eggs, pumpkin, and vanilla.
  4. Fold dry ingredients into wet until just combined.
  5. Beat cream cheese filling ingredients until smooth.
  6. Layer batter and filling into liners.
  7. Bake 18–22 minutes until set.
  8. Cool before serving.

Notes

Store refrigerated due to cream cheese filling.
