Ingredients
  

Roll-Ups
  • 10 slices sandwich bread soft
  • 0.5 cup pumpkin purée
  • 2 tbsp sugar for filling
  • 0.5 tsp cinnamon
  • 0.125 tsp nutmeg
  • 2 oz cream cheese optional
  • 2 eggs
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • 3 tbsp butter for frying
Coating
  • 0.25 cup sugar
  • 1 tsp cinnamon

Method
 

  1. Trim crusts and flatten each bread slice with a rolling pin.
  2. Mix pumpkin puree, sugar, cinnamon, nutmeg, and cream cheese if using.
  3. Spread filling onto bread slices and roll tightly.
  4. Whisk eggs, milk, and vanilla to create the custard mixture.
  5. Dip each roll-up lightly in the custard.
  6. Melt butter in a skillet over medium heat.
  7. Fry roll-ups until golden on all sides.
  8. Roll warm roll-ups in cinnamon sugar and serve immediately.

Notes

Serve with maple syrup or whipped cream for extra sweetness.
