Ingredients
  

Pasta
  • 12 oz pasta
Sauce
  • 6 strips bacon chopped
  • 2 yellow onions sliced
  • 3 cloves garlic minced
  • 1 cup pumpkin purée
  • 0.75 cup heavy cream
  • 0.5 cup Parmesan cheese grated

Equipment

  • Large skillet
  • Pot for pasta
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente and reserve pasta water.
  2. Cook bacon until crispy and set aside.
  3. Caramelize onions in bacon fat for 20–25 minutes.
  4. Add garlic and cook briefly.
  5. Stir in pumpkin purée, cream, and seasoning.
  6. Combine pasta, sauce, bacon, and Parmesan.

Notes

Add pasta water as needed to adjust sauce consistency.
