Method
- Season pork tenderloin with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear pork on all sides until golden brown, about 8 minutes total.
- Remove pork from skillet and set aside.
- Add butter to skillet and sauté garlic until fragrant.
- Pour in chicken broth and scrape up browned bits.
- Stir in Dijon mustard and thyme.
- Add heavy cream and simmer until slightly thickened.
- Return pork to skillet and simmer until internal temperature reaches 145°F.
- Rest briefly, slice, and serve with sauce.
Notes
Do not overcook the pork. Use a thermometer for best results.
