Ingredients
  

Pork
  • 1 lb pork tenderloin trimmed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Dijon Cream Sauce
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 0.75 cup chicken broth
  • 2 tbsp Dijon mustard
  • 0.5 cup heavy cream
  • 1 tsp fresh thyme or 0.5 tsp dried

  • Tongs
  • Meat thermometer
  • Knife and cutting board

Method
 

  1. Season pork tenderloin with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear pork on all sides until golden brown, about 8 minutes total.
  4. Remove pork from skillet and set aside.
  5. Add butter to skillet and sauté garlic until fragrant.
  6. Pour in chicken broth and scrape up browned bits.
  7. Stir in Dijon mustard and thyme.
  8. Add heavy cream and simmer until slightly thickened.
  9. Return pork to skillet and simmer until internal temperature reaches 145°F.
  10. Rest briefly, slice, and serve with sauce.

Notes

Do not overcook the pork. Use a thermometer for best results.
