Method
- Season pork chops with salt and pepper.
- Heat olive oil and butter in a skillet and sear pork chops until golden. Remove and set aside.
- Add mushrooms to skillet and cook until browned.
- Add shallots, garlic, thyme, and paprika. Cook until fragrant.
- Pour in chicken broth and scrape up browned bits.
- Stir in heavy cream and Dijon mustard. Simmer gently.
- Return pork chops to pan and cook until tender.
- Serve with sauce spooned over the top.

Use thick-cut chops for the best texture.
