Ingredients
  

Pork Chops
  • 4 pork chops bone-in or boneless
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp butter
Creamy Mushroom Sauce
  • 8 oz mushrooms sliced
  • 1 shallot minced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp thyme fresh
  • 0.5 tsp paprika
  • salt and pepper to taste

Method
 

  1. Season pork chops with salt and pepper.
  2. Heat olive oil and butter in a skillet and sear pork chops until golden. Remove and set aside.
  3. Add mushrooms to skillet and cook until browned.
  4. Add shallots, garlic, thyme, and paprika. Cook until fragrant.
  5. Pour in chicken broth and scrape up browned bits.
  6. Stir in heavy cream and Dijon mustard. Simmer gently.
  7. Return pork chops to pan and cook until tender.
  8. Serve with sauce spooned over the top.

Notes

Use thick-cut chops for the best texture.
