Salad
  • 6 cups mixed salad greens
  • 1 cup pomegranate arils
  • 0.5 cup feta or goat cheese crumbled
  • 0.5 cup walnuts or pecans toasted
Honey Mustard Dressing
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 3 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 0.25 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Place washed and dried salad greens in a large serving bowl.
  2. Top with pomegranate arils, crumbled cheese, and toasted nuts.
  3. In a small bowl, whisk together Dijon mustard, honey, olive oil, vinegar, salt, and pepper until smooth.
  4. Drizzle dressing over the salad just before serving.
  5. Toss gently to combine and serve immediately.

Notes

For best texture, dress the salad right before serving.
