Pickled Pepper and Onion Relish

Ingredients
  

Relish Base
  • 2 cups mixed bell peppers, finely chopped
  • 1 cup thinly sliced onions red onions preferred
  • 2 jalapeños or other chili peppers, finely chopped
  • 1 cup vinegar white or apple cider vinegar
  • 0.5 cup sugar
  • 1 tsp salt
  • 1 tsp mustard seeds
  • 0.5 tsp celery seeds
  • 0.5 tsp black peppercorns
  • 1 clove garlic, smashed

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Prep peppers and onions by chopping evenly and slicing thinly.
  2. In a saucepan, combine vinegar, sugar, salt, mustard seeds, celery seeds, garlic, and peppercorns. Bring to a simmer.
  3. Add chopped peppers and onions. Simmer 3–4 minutes to soften slightly.
  4. Transfer relish and brine to clean jars.
  5. Cool completely, seal, and refrigerate at least 12 hours before serving.

Great for burgers, sandwiches, tacos, cheese boards, and gifting.
