Method
- Season chicken with cumin, paprika, turmeric, salt, and pepper.
- Heat olive oil in a large skillet and sear chicken until golden. Remove and set aside.
- Sauté onion and garlic in the same pan until soft.
- Stir in rice and toast for 1–2 minutes.
- Add chicken broth and bring to a simmer.
- Return chicken to pan, cover, and cook until rice is tender and chicken is cooked through.
- Blend all green sauce ingredients until smooth.
- Serve chicken and rice topped with green sauce.
