Method
 

  1. Pat chicken breasts dry and season both sides with salt, pepper, and optional spices.
  2. Heat oil in a heavy skillet over medium-high heat until shimmering.

  4. Flip chicken, reduce heat to medium, and cook another 5–7 minutes.
